Almond Pesto Cucumber Bites
Sometimes beautiful things come out of procrastination! What I mean by that is that I had to go to a potluck a couple weeks ago where we were all told to bring a dish to contribute. Naturally, I left things to the last minute and was left to whip up something in a matter of minutes. Well, these super fun and flavourful Almond Pesto Cucumber Bites were born – and guess what? Everyone LOVED them!
These Almond Pesto Cucumber Bites are gluten-free, dairy-free, paleo and keto-friendly. Why? Because I love making food that everyone can enjoy despite their dietary preferences (providing following those dietary preferences are what make you feel your best!).

Almond Pesto Cucumber Bites
Ingredients
1 cucumber, sliced
1 cup almonds
3 tbsp pesto (I used Sunflower Kitchen's Basil Pesto)
1/4 cup olive oil
2 tbsp nutritional yeast
Directions
Placed all ingredients except the cucumber in a food processor and blitz for 30 seconds until ingredients reach a fine paste.
Slice cucumber and scoop spoonful of almond pesto mix onto each cucumber.
Serve and enjoy!
